Tomato Topped Meat Loaf - cooking recipe

Ingredients
    1 carrot, grated
    1 small green pepper, chopped
    1 medium onion, chopped
    2 Tbsp. margarine
    2 slices toast
    1/2 c. milk
    2 lb. ground chuck
    1 egg
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Saute first 3 ingredients in margarine 2 to 3 minutes.
    Soak toast in milk until softened.
    Combine all ingredients; mix lightly.
    Shape in loaf in roasting pan; bake 375\u00b0 for 1 hour, let stand for 10 minutes.
    Place on serving platter and pour topping over loaf.
