Lemon Loaf(10 Slices; Crunchy, Lemony Goodness!) - cooking recipe
Ingredients

1 c. walnuts
2 tsp. baking powder
1/2 c. margarine
1/4 tsp. salt
2 c. unbleached white flour
2 Tbsp. fresh lemon juice
1/2 c. sugar
1 tsp. baking soda
3/4 c. buttermilk
1/4 c. lemon juice
grated peel of 1 lemon
3 Tbsp. sugar
Preparation

Preheat oven to 375\u00b0.
Grease a loaf pan with margarine.
Chop walnuts with food processor or nut chopper.
Set aside.
Cream 1/2 cup sugar and margarine with mixture.
Add grated lemon peel and mix until smooth.
Mix together flour, salt, baking powder and baking soda and set aside.
Mix buttermilk and lemon juice and set aside.
Add flour mixture to creamed mixture, alternately with buttermilk mixture.
Do not overmix.
Stir in walnuts.
Pour into loaf pan and bake for 30 to 45 minutes.
Let cool in pan 10 minutes.
