Mint Marinated Leg Of Lamb - cooking recipe

Ingredients
    1/2 c. olive oil
    1/4 c. packed, minced, fresh mint
    2 bay leaves, crumbled
    1/2 c. dry red wine
    4 large garlic cloves, minced
    1 (5 lb.) leg of lamb, boned and butterflied
Preparation
    Mix the first 5 ingredients in a large baking dish.
    Season with generous amount of pepper.
    Add lamb, turning to coat.
    Cover and refrigerate overnight.
