Italian Butter Bean Bake - cooking recipe

Ingredients
    1 1/2 c. onion, chopped finely
    1/3 c. defatted chicken broth
    3 cloves garlic, pressed
    3 to 4 (15 oz.) cans butter beans, drained
    1 tsp. oregano
    1 tsp. thyme
    1/2 tsp. ground cumin
    3 Tbsp. lemon juice
    1/4 c. chopped parsley
    2 (1 lb.) cans plum tomatoes
    1 tsp. basil
    1 bay leaf
    1/2 tsp. coriander
    1/3 c. apple juice concentrate
Preparation
    Saute onion, chicken broth and garlic until transparent.
    Add remaining ingredients to saute mixture.
    Bring to boil; transfer to casserole.
    Bake uncovered at 325\u00b0 for 2 1/2 to 3 hours until thickened.
