Baked Mushroom Rice - cooking recipe

Ingredients
    2 c. rice, uncooked
    1 c. sliced green onions
    2 Tbsp. butter, melted
    3 c. chicken broth
    1/2 c. dry sherry
    1 (4 1/2 oz.) jar sliced mushrooms, undrained
    1 (4 oz.) jar chopped pimento, drained
    1 tsp. salt
    1 tsp. pepper
Preparation
    Place rice in a greased 11 x 7 x 1 1/2-inch baking dish.
    Cook onions, stirring constantly, in skillet until tender.
    Add broth and remaining ingredients.
    Bring to boil and pour over rice. Cover and bake at 375\u00b0 for 25 minutes or until liquid is absorbed and rice is tender.
    Stir before serving.
    Yields 8 servings.
