Surprise Sweet Potato Balls - cooking recipe

Ingredients

2 to 3 sweet potatoes
3 eggs
1 pkg. large marshmallows
3 c. finely crushed corn flakes
1 c. brown sugar, packed
1 c. light cream
1 tsp. flour
1/2 to 1 tsp. vanilla

Preparation

Cook sweet potatoes in boiling water until done.
Peel and mash real fine, add slightly beaten eggs to mixture and mix well. Form into balls around marshmallow, then roll in crushed corn flakes.
Place into baking dish being careful not to crowd.
Set aside while topping is being prepared.
