Hot Potato Salad With Bacon - cooking recipe

Ingredients
    9 medium size boiling potatoes (about 3 lb.), scrubbed but not peeled
    1/2 lb. lean bacon, finely diced
    2 oz. finely chopped onion
    3 Tbsp. white wine or cider vinegar
    3 Tbsp. water
    1/2 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. finely chopped parsley
Preparation
    Boil the potatoes until soft; do not overcook.
    Drain, then peel and cut into 1/4-inch slices.
    Set aside potatoes ina bowl covered with aluminum foil.
