Zucchini Relish - cooking recipe
Ingredients

10 c. zucchini, peeled and ground
5 Tbsp. salt
2 c. onions, ground
1 green pepper, ground
1 red pepper, ground
6 c. sugar
2 1/4 c. vinegar
1 tsp. nutmeg
1 tsp. dry mustard
1 Tbsp. turmeric
2 Tbsp. cornstarch
2 Tbsp. celery seed
Preparation

Combine the
zucchini, onions and salt; let stand for 6 hours. Drain and rinse.
Grind the green and red peppers; add to the zucchini mixture.
Add the remaining ingredients.
Cook for 30 minutes, stirring well.
Pack in canning jars.
