Canadian Cheese Soup - cooking recipe

Ingredients
    2 c. chicken stock
    1 c. diced carrots
    1 1/2 c. celery, diced
    8 oz. butter
    1/4 c. onion, minced
    1/2 c. flour, sifted
    6 c. milk
    8 oz. American cheese, shredded
    8 oz. Cheddar cheese, shredded
Preparation
    Heat chicken stock.
    Add celery and carrots.
    Cook until vegetables are tender; set aside.
    Heat butter in saucepan.
    Add onion and saute lightly.
    Add flour and stir with a wire whip; cook 2 to 4 minutes, making sure flour and butter are well blended.
    Add vegetable broth and milk; stir with wire whip and bring to a boil.
    Turn heat to low as it thickens.
    Add cheese and stir over low heat until cheese is melted.
    Garnish with fresh chopped parsley or bacon bits.
