Chicken Fricassee - cooking recipe

Ingredients
    6 to 7 lb. chicken
    1 medium onion
    1 1/2 stalks celery
    1/2 tsp. pepper
    salt to taste
    1 (10 oz.) can plain bread crumbs
    sage (optional)
Preparation
    Place chicken, seasoning, onion and celery in kettle.
    Add water; bring to boil and skim.
    Then cook over medium-high heat until tender.
    When cool enough, remove skin and bones.
    Reserve the good skin for later.
