Exotic Chicken Salad - cooking recipe

Ingredients
    2 chicken breasts, cooked, boned and cut into bite-size pieces
    1/2 c. thinly sliced celery
    1 tsp. curry powder
    2 tsp. lemon juice
    1 small can water chestnuts, drained and sliced
    1/2 c. slivered almonds
    3/4 c. mayonnaise
    2 tsp. soy sauce
    1 c. mandarin oranges, drained
Preparation
    In a large bowl, mix chicken, water chestnuts, celery and almonds.
    In small bowl, mix mayonnaise, curry, soy sauce and lemon juice.
    Mix well.
    Up to 4 hours before serving, gently stir mayonnaise mixture and oranges into chicken mixture.
    Serve on a bed of chilled lettuce.
    Serves 4.
