6-Day Sweet Pickles - cooking recipe

Ingredients
    about 24 large cucumbers
    8 c. sugar or 4 c. sugar and 4 c. honey
    4 c. white vinegar
    2 Tbsp. mixed pickling spice
    5 tsp. canning salt
Preparation
    Wash the large cucumbers.
    Pour boiling water over cucumbers, enough to cover them.
    Let stand overnight.
    Repeat 3 times (4 times total).
    Drain and cut cucumbers into 1/2 to 3/4-inch chunks. Rinse.
    Mix and bring the ingredients to a boil.
    Put the cucumbers into the mix.
    Take off heat.
    Let stand for 2 days, stirring occasionally.
    Bring all to a boil.
    Put into sterilized jars and seal.
    Additional processing in hot water bath for 5 minutes may be done.
    Makes 10 to 12 pints.
