Steak Diane - cooking recipe

Ingredients
    4 Filet Mignon steaks (about 6 oz. each)
    salt and pepper to taste
    2 Tbsp. olive oil
    3 Tbsp. butter
    3 Tbsp. chopped chives or shallots
    2 Tbsp. cognac
    3 Tbsp. chopped parsley
    1 tsp. imported mustard
    1/2 tsp. Worcestershire sauce
    2 tsp. beef broth
Preparation
    Place slices of filet on a flat surface.
    Pound with a flat mallet to about 1/4-inches thick.
    Sprinkle with salt and pepper. Heat 2 tablespoons of oil and 2 tablespoons of butter in large skillet.
    When very hot, add steaks.
    Cook about 1 1/2 minutes on one side; turn and cook about 30 seconds on the other side. Transfer to hot serving dish.
