Zucchini Relish - cooking recipe
Ingredients

10 c. zucchini
4 c. onions
2 c. celery
2 large green peppers
2 1/2 c. vinegar
4 to 6 c. sugar
1 Tbsp. cornstarch
2 tsp. celery seed
1 tsp. nutmeg
1 tsp. turmeric
1/2 tsp. black pepper
1/8 tsp. red pepper
Preparation
-
Grind first 4 ingredients.
Add 5 tablespoons of salt and enough cold water to cover and let stand overnight.
Rinse in cold water 3 times and drain, then add the remaining ingredients.
Cook for 30 minutes.
Seal in jars.
