Spanish Style Chicken And Sausage - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1/2 lb. sweet or spicy Italian sausage or chorizo, cut into 1/2-inch slices
    1 whole chicken breast, boned, skinned and cut into 1/2-inch cubes
    1 medium onion, chopped
    1 medium green pepper, chopped
    2 chicken bouillon cubes
    1 2/3 c. hot water
    1/2 tsp. salt
    1/2 tsp. ground thyme
    1/4 tsp. garlic powder
    1 c. frozen green peas
    1 1/2 c. instant rice
    2 medium tomatoes, diced
Preparation
    Heat oil in large skillet; add sausage and brown well, about 5 minutes.
    Drain fat.
    Add chicken, onion and green pepper and cook 5 minutes longer.
    Meanwhile, dissolve bouillon cubes in water; stir in salt, thyme and garlic powder.
    Pour into skillet.
    Add peas and bring to a boil.
    Cover, reduce heat and simmer 5 minutes.
    Stir in rice and tomatoes.
    Cover; remove from heat and let stand 5 minutes.
    Makes 6 servings.
