Chicken And Dumplings - cooking recipe

Ingredients
    1 (3 lb.) chicken
    1/4 c. oil
    salt, pepper and onion to taste
    2 c. flour
    1 tsp. salt
    1/4 c. shortening
    2 eggs, beaten
    1/4 c. milk
Preparation
    Rinse chicken; pat dry.
    Cut into serving pieces.
    Brown in oil in skillet; drain.
    Place in stockpot with water to cover. Add salt, pepper and onion.
    Simmer, covered, until chicken is tender.
    Combine flour and 1 teaspoon salt in medium bowl.
    Cut in shortening until crumbly.
    Stir in eggs and enough milk to make soft dough.
    Roll out on floured surface to 1/8-inch thickness. Cut into 2-inch squares.
    Remove chicken from stockpot, reserving stock.
    Set aside.
    Bring reserved chicken stock to a boil.
    Drop in dumplings, one at a time.
    Cook for 20 minutes or until tender. Return chicken to stockpot.
    Simmer until heated through.
