Muffins - cooking recipe
Ingredients

1 c. whole wheat flour
1 c. sifted all-purpose flour
1/2 tsp. salt
2 1/2 tsp. baking powder
3 Tbsp. sugar
1 egg or 2 egg whites or substitute equivalent to 1 egg
1 c. skim milk
1/2 c. oil
Preparation

Grease muffin tin lightly with oil.
Sift flour together with salt, baking powder and sugar.
Add egg, milk and oil.
Stir quickly, only until barely blended.
Do not beat.
Fill each tin to 2/3 full of batter.
Bake at 425\u00b0 for 20 to 25 minutes.
Yield: 12 (2 1/2-inch) muffins.
