Ingredients

1 lb. can sliced beets
2 tsp. cornstarch
1/4 c. sugar
1/4 c. vinegar
Preparation

Drain the beets, saving 1/4 cup of the liquid.
In a 1-quart saucepan, stir together the cornstarch and sugar.
Gradually stir in the beet juice and vinegar, keeping smooth.
Cook over medium heat, stirring constantly, until thickened.
Add the beets and heat gently.
Makes 4 to 5 servings.
