Zucchini Oatmeal Muffins - cooking recipe
Ingredients

2 1/2 c. flour
1 1/2 c. sugar
1 c. chopped nuts
1/2 c. quick oats
1 Tbsp. baking powder
1 tsp. salt
1 tsp. cinnamon
4 eggs
1 medium sized zucchini (10 oz.), finely shredded
3/4 c. oil
Preparation

Grease pan.
Measure first 7 ingredients into a large bowl. In medium bowl, beat eggs slightly.
Stir in zucchini and oil. Stir all at once into flour.
Mix just until moist.
Spoon into pans.
Bake 25 minutes or until toothpick comes out clean in 400\u00b0 oven.
Remove and cool on racks or serve warm.
