Eggplant Au Gratin - cooking recipe

Ingredients
    1/2 c. grated cheese
    1 medium onion
    2 eggs, beaten
    1/2 c. canned tomatoes
    2 Tbsp. butter
    1/2 c. bread crumbs
    medium eggplant
    4 Tbsp. bacon grease
Preparation
    Boil eggplant in small amount of water after peeling.
    Fry onion in bacon fat.
    Add tomatoes, eggplant, crumbs and eggs; mix well.
    Grease casserole; add mixture.
    Top with cracker crumbs or bread crumbs.
    Dot with butter.
    Bake at 350\u00b0 for 45 minutes.
