Spinach Omelet - cooking recipe

Ingredients
    2 eggs, beaten
    1 small onion, diced
    1/4 c. frozen chopped spinach
    2 oz. extra sharp Cheddar cheese, grated
    salt
    pepper
Preparation
    Pour beaten eggs in a hot pan sprayed with nonfat spray. Sprinkle with salt and pepper.
    Cook until dry around outer edge. Cover with onion, spinach and cheese. Fold omelet and cook an additional 2 minutes or until egg is done and cheese melted.
