Mom'S Minestrone - cooking recipe
Ingredients

2 to 3 medium onions, sliced
2 to 3 all-purpose potatoes, cut up
3 to 4 carrots, sliced
1 pkg. frozen cut green beans
1 pkg. frozen petite peas
a few sprigs fresh parsley
1 few lettuce leaves, cut up *
1 celery stalk, cut up *
2 zucchini, thickly sliced *
other vegetables to taste *
1 (14 oz.) can whole tomatoes
1 1/2 to 2 c. broth
salt and pepper to taste
small pasta (ditalini, tubetti, little shells, nothing larger than elbow macaroni)
Preparation

Brown sliced onions in oil at bottom of large soup pot.
Turn off heat while you prepare and add all other ingredients, except pasta.
The beauty of this recipe is that you can include almost anything you have and like and the amounts do not have be exact. (*The starred vegetables are definitely optional.)
