Strawberry Rhubarb Pie - cooking recipe

pastry for a 2 crust pie
1 Tbsp. grated orange rind
3 c. sliced rhubarb
1 c. sliced strawberries
1 c. sugar
1/4 c. orange juice
2 Tbsp. quick cooking tapioca
1/4 tsp. nutmeg
1/4 tsp. salt
1 Tbsp. butter
Preparation

Preheat oven to 450\u00b0.
Include orange rind when making pastry dough.
I use Pillsbury pie crusts and grate orange rind over crust.
Mix rhubarb, strawberries, sugar, orange juice, tapioca, nutmeg and salt together in large bowl.
Turn into prepared pie shell.
Dot the filling with butter.
Cover with remaining pie crust; moisten, seal and flute edges.
Cut slits in crust in several places.
Bake at 450\u00b0 for 10 minutes.
Reduce temperature to 350\u00b0 and bake an additional 30 minutes or until top crust is lightly browned.
Makes one 9-inch pie.
