Beef Tips Napoli - cooking recipe

Ingredients
    3 lb. boneless beef chuck
    1 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. salad oil
    12 oz. tomato paste
    2 Tbsp. lemon juice
    1/2 tsp. sugar
    1 tsp. marjoram
    1 small carrot, thinly sliced
    1 clove garlic, minced
    1 lb. shell macaroni
    1/4 c. grated Parmesan cheese
    2 Tbsp. chopped parsley
Preparation
    Cut beef into 2-inch cubes; sprinkle with salt and pepper. Brown in oil in large skillet.
    Mix tomato paste with 1 1/2 cups water, lemon juice, sugar, marjoram, carrot and garlic; pour over beef.
    Cover.
    Simmer for 1 hour and 30 minutes to 2 hours, adding water and salt if needed.
    Cook macaroni according to package directions; drain well.
    Mix with cheese and parsley.
    Serve beef mixture over macaroni.
