Cheddar Stack Cakes With Spiced Fruit Sauce - cooking recipe

1 (8 oz. ) pkg. mixed dried fruits, cut coarsely with scissors
1/4 c. firmly packed brown sugar
1 Tbsp. fresh lemon juice
1/4 tsp. nutmeg
1 1/2 c. coarsely chopped fresh or thawed frozen peeled peaches
1 egg
1 c. skim or low-fat milk
1 1/2 c. biscuit mix
2 c. (8 oz.) Sargento Fancy Supreme shredded mild or sharp Cheddar cheese, divided
Preparation

In medium saucepan, combine 2 cups water, dried fruit, brown sugar, lemon juice and nutmeg.
Heat to a boil.
Reduce heat; cover and simmer for 20 to 25 minutes or until thickened, stirring occasionally.
Stir in peaches; keep warm.
