Tuna And Vegi Sandwich - cooking recipe

Ingredients
    2 (6 1/2 oz. each) cans light tuna in olive oil (undrained)
    2 Tbsp. vinegar
    1/2 tsp. minced garlic
    1 (8-inch) round loaf Italian bread
    1 (7 oz.) jar roasted sweet red peppers, drained
    2 c. chilled stewed eggplant mixture
Preparation
    Drain oil from tuna into a 1-cup glass measure.
    Take 1/4 cup oil.
    Add vinegar and garlic and beat with fork until blended.
    Cut loaf in half horizontally.
    Pull some bread from the center of each half to form a hollow, about 1-inch deep.
    Spoon oil mixture over both sides.
