Zucchini Bread - cooking recipe

Ingredients
    3 large eggs
    3 c. flour
    2 c. sugar
    1 tsp. salt
    1 tsp. cinnamon
    1/2 tsp. pumpkin pie spice
    1 tsp. baking soda
    1 tsp. baking powder
    3/4 c. coconut (optional)
    3/4 c. chopped nuts
    1 c. salad oil
    2 tsp. vanilla extract
    3 c. grated raw zucchini (do not peel)
Preparation
    Mix the dry ingredients together in a bowl.
    Blend the other ingredients in a separate bowl.
    Add the egg mixture to the dry ingredients.
    Prepare bread loaf pans:
    spray with nonstick cooking spray; flour.
    Pour mixture into prepared pans.
    Bake at 325\u00b0 to 350\u00b0 for one hour (or until light brown).
    Test with toothpick. Butter top.
    Cool on wire rack for 20 minutes.
