Stir-Fried Chicken And Vegetables - cooking recipe

Ingredients
    1/4 c. chopped onions
    2 minced garlic cloves
    2 Tbsp. olive oil
    2 c. diced skinless white meat chicken
    1 c. chopped broccoli
    1 sliced red pepper
    1 c. sliced mushrooms
    6 Tbsp. low sodium soy sauce
    1/2 tsp. ground ginger
    1 Tbsp. parsley
Preparation
    In skillet, saut onions and garlic in oil for 2 minutes.
    Add chicken and cook 2 minutes more or until chicken is cooked through. One at a time, add broccoli, pepper and mushrooms, sauteing each for 1 minute before adding next ingredient.
    Add soy sauce, ginger and parsley to chicken/veggies.
    Reduce heat; cover and steam 4 to 5 minutes.
    Stir and serve immediately.
    Makes 2 servings.
