Skillet Hot Potato Salad - cooking recipe

Ingredients
    3 lb. potatoes (about 9 medium size potatoes)
    16 oz. bulk pork sausage (thawed, if frozen)
    1 large onion, chopped (approximately 1 c.)
    1 (13 3/4 oz.) can beef broth
    2/3 c. red wine vinegar
    1 c. thinly sliced celery with leaves
    1 tsp. salt
    1/4 tsp. pepper
    2 hard-cooked eggs, chopped
    1/3 c. sliced, pitted black olives (optional)
    1/3 c. sliced pimento-stuffed green olives
Preparation
    Cook potatoes in boiling salted water to cover in a large saucepan until tender, about 20 minutes.
    Drain, cool, peel and dice.
    Place in a large bowl.
