Banana Nut Cake - cooking recipe

2 1/2 c. all-purpose flour
1 2/3 c. sugar
1 1/4 c. mashed bananas (about 3 medium)
2/3 c. finely chopped nuts
2/3 c. shortening
2/3 c. buttermilk
3 eggs
1 1/4 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
Preparation

Heat oven to 350\u00b0.
Grease and flour rectangular pan or 2 round pans.
Beat all ingredients on low speed, scraping bowl constantly 30 seconds.
Beat on high speed 3 minutes, scraping bowl occasionally.
Bake in rectangular pan 40 to 50 minutes, or round pans 35 to 40 minutes.
Cool.
Yields 15 servings, 310 calories per serving.
