Stuffed Spaghetti Squash - cooking recipe
Ingredients

1 spaghetti squash, cut in half
1 3/4 c. chopped fresh zucchini
1/4 c. tomato juice
1/4 tsp. dried oregano or 1 tsp. fresh chopped oregano
1 (15 oz.) can black beans, drained and rinsed
2 large cloves garlic, minced
salt and pepper to taste
Preparation

Place the squash, cut side down, in a baking dish and add 1/2-inch of water.
Bake in a preheated 350\u00b0 oven for 30 minutes or until the squash is fork-tender.
Place the halves on a plate. Fluff the strands with a fork. During the last 10 minutes of baking time, heat the zucchini, tomato juice, oregano, beans, garlic, salt and pepper in a medium saucepan. Spoon the mixture into the spaghetti squash halves and toss lightly.
