Argentinian Stew In A Pumpkin Shell - cooking recipe

Ingredients
    2 lb. boneless stew meat
    1 large onion
    2 cloves garlic, minced
    3 Tbsp. oil
    2 large tomatoes, chopped
    1 large green pepper, chopped
    1 Tbsp. salt
    1/2 tsp. pepper
    1 tsp. sugar
    1 c. dried apricots
    3 potatoes, diced
    3 sweet potatoes, diced
    2 c. beef broth
    1 medium pumpkin
    melted butter or margarine
    salt and pepper
    1/4 c. dry sherry
    1 (1 lb.) can corn, drained
Preparation
    Cut meat into 1 1/2-inch cubes.
    Cook meat, onion and garlic in oil until browned.
    Add tomatoes, green pepper, salt, pepper, sugar, apricots, potatoes, sweet potatoes and broth.
    Cover and simmer 1 hour.
