Polynesian Chicken Salad - cooking recipe
Ingredients

2 c. diced, cooked chicken
1 1/2 c. diced celery
1 1/2 c. diced canned pineapple or white grapes
1/4 c. shredded carrot
1/2 c. toasted almond halves
1/2 c. mayonnaise
1 tsp. curry powder
1/2 tsp. salt
1/4 c. sour cream
1 tsp. fresh lemon juice
Preparation

Combine chicken, celery, pineapple or grapes, carrots and almonds.
Blend mayonnaise with sour cream and seasonings.
Pour over chicken and toss lightly.
Chill.
Arrange on lettuce leaves and garnish with parsley.
Serves 6.
