Orange-Baked Sweet Potatoes - cooking recipe

Ingredients
    2 medium navel oranges
    1 Tbsp. butter or margarine
    1 1/2 Tbsp. finely chopped pecans
    1 (16 oz.) can cut sweet potatoes, drained and mashed
    2 Tbsp. brown sugar
    3 Tbsp. orange juice
    1/2 tsp. pumpkin pie spice
    1/8 tsp. salt
Preparation
    Cut oranges in half; clip membranes.
    Carefully remove pulp and chop.
    Set orange cups and 1/4 cup pulp aside.
    Place butter in a glass measure; microwave at High 35 seconds or until melted. Spread pecans in a pie plate.
    Microwave at High 2 minutes, stirring after 1 minute.
    Combine sweet potatoes, reserved orange pulp, melted butter, pecans, brown sugar and remaining ingredients; stir well.
    Spoon mixture into orange cups.
    Place cups on a pie plate; cover with wax paper.
    Microwave at High 5 minutes.
    Yields 4 servings.
