Mimi'S Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 medium onion, chopped
    1/2 tsp. salt
    1 c. canned tomatoes
    1 c. sharp cheddar cheese, grated
    1/4 c. milk
    1 egg, well beaten
    Crumbled cornbread or crushed crackers
Preparation
    Peel
    and chop eggplant; add salt and onion.
    Cook 20 minutes using only enough water to get eggplant steaming.
    Drain and mash slightly.
    Add cheese (use only sharp cheddar), milk, egg and tomatoes.
    Place in a sightly greased casserole dish and top with either cornbread or crackers.
    Bake in a 350\u00b0 oven for 40 minutes.
