Black Beans Fantastic - cooking recipe
Ingredients

1 (14 oz.) pkg. dried black beans
1 can chicken broth
2 Tbsp. olive oil
1 small onion, chopped
1 green pepper, chopped
3 cloves garlic, chopped
1 tsp. salt
1/2 tsp. pepper
6 oz. chopped ham
1/4 c. wine vinegar
Preparation

Soak beans overnight in water to cover, then drain and rinse. Put beans in large pot with chicken broth and water enough to cover. Bring to a boil. While beans are heating, saute vegetables in the olive oil until soft. When beans begin to boil, add sauteed vegetables, salt, pepper and ham.
Cook until tender and the liquid has thickened, about 2 1/2 hours on lower heat.
Add vinegar the last 15 minutes of cooking time. Serve hot over rice or at room temperature as a relish.
