Ruth Barney'S Zucchini Pie - cooking recipe
Ingredients

1 c. biscuit mix
1/2 c. Parmesan cheese, grated
1/4 tsp. salt
1/8 tsp. pepper
1/2 tsp. parsley flakes
4 large eggs
1/2 c. vegetable oil
2 tsp. aromatic bitters (Angostura)
3 1/2 to 4 c. zucchini, quartered and thinly sliced (unpeeled)
1 medium onion
Preparation

Combine in large bowl biscuit mix, cheese, salt, pepper and parsley flakes.
Beat together eggs, oil and bitters.
Add to dry ingredients.
Add zucchini and onions.
Mix well.
Pour into 10-inch pie plate or 9-inch round baking pan.
Bake in preheated oven at 350\u00b0 for 30 minutes or until toothpick inserted comes out clean.
