Diabetic Cake - cooking recipe

Ingredients
    2 c. water
    2 c. raisins
    1 c. unsweetened applesauce
    2 eggs
    2 tsp. liquid sweetener
    3/4 c. cooking oil
    1 tsp. baking soda
    2 c. flour
    1 1/4 tsp. cinnamon
    1/2 tsp. nutmeg
    1 1/2 tsp. vanilla
Preparation
    Cook the raisins in water until all the water is absorbed. One at a time, add applesauce, eggs, sweetener, oil and vanilla and mix well.
    In separate dish, mix all dry ingredients, then add this to applesauce mixture.
    Mix well.
    Batter will be thin.
