Potato Soup - cooking recipe
Ingredients

1 Tbsp. olive oil
1 onion, thinly sliced
1/4 tsp. oregano
1/4 tsp. basil
1/4 tsp. thyme
4 unpeeled potatoes, diced
2 c. salt-free, defatted chicken broth
2 c. water
1 c. buttermilk or evaporated nonfat milk
1/2 tsp. salt (optional)
pepper to taste
Preparation

In a 2-quart pan, saute onion and herbs in olive oil until tender.
Add potatoes, broth and water.
Cover and simmer for 20 to 30 minutes, or until potatoes are tender.
Stir in milk, salt and pepper.
Serves 4 to 6.
