Wilted Spinach Salad - cooking recipe
Ingredients

3 or 4 c. cleaned spinach
1/2 tsp. garlic, minced
4 oz. olive oil
1/2 c. chopped onion
1/2 c. chopped ham
1/4 tsp. salt
1 tsp. sugar
1 heaping tsp. Dijon-style mustard
2 tsp. Worcestershire sauce
1 lemon
2 oz. red wine vinegar
fresh ground pepper to taste
Preparation

Heat olive oil in pan over high heat.
Add garlic, onion and ham.
Cook until onion begins to wilt.
Add salt, sugar, mustard, Worcestershire sauce and pepper.
Squeeze lemon into pan through napkin; shake out the seeds and add lemon halves.
Add vinegar. Bring to a boil and pour over the spinach; toss and cover the bowl with the inverted pan and allow spinach to wilt for approximately 1 minute.
Serve on warmed plates.
Garnish with lemon halves.
