Shrimp Saute (Garides Yahni)(Greek) - cooking recipe

Ingredients
    2 lb. shrimp
    5 onions, sliced
    1/2 c. olive oil
    2 c. canned Italian tomatoes
    1 tsp. parsley, chopped
Preparation
    Shell and devein shrimp.
    Cook in boiling water for 5 minutes. Drain and put aside.
    In a skillet, saute onions in olive oil. Add tomatoes and parsley. Simmer 20 minutes.
    Add shrimp and cook 5 more minutes.
    Preparation time:
    45 minutes. Total cooking time: 30 minutes.
