Vegetable Medley - cooking recipe

Ingredients
    4 potatoes, thinly sliced
    3 carrots, sliced
    1/2 c. celery, sliced
    1 chopped onion
    3 Tbsp. vegetable oil
    salt and pepper to taste
Preparation
    Place potatoes, carrots, celery and onion in oil in heavy skillet.
    Season with salt and pepper.
    Stir-fry, on medium high heat until potatoes and carrots are tender.
    Lower heat, cover and let cook for about 12 minutes more.
    Serves about 4 people.
