Texas Caviar - cooking recipe

Ingredients
    2 (20 oz.) cans black-eyed peas
    3/4 c. oil
    1/4 c. vinegar
    1 clove chopped garlic
    1/4 c. thinly sliced onion
    1/2 tsp. salt
    pepper to taste
Preparation
    Drain peas.
    Add remaining ingredients.
    Mix. Let refrigerate for at least 2 days to blend flavors.
    Drain to serve.
