Shannnon'S Cranberry Orange Muffins(Fat-Free) - cooking recipe
Ingredients

1 c. dried sweetened cranberries
2 c. cake flour
2 1/4 t. baking powder
3/4 c. sugar
1/2 t. salt
1/4 c. Egg Beaters
1 t. unsweetened applesauce
Juice of 1 large orange
Grated zest of 1 orange
Preparation

Preheat oven to 350\u00b0. Reconstitute cranberries in boilling water and drain. Combine dry ingredients in a large mixingbowl. In a separate bowl, combine wet ingredients; stir wet ingredients into dry ingredients. Mix in orange zest and cranberries. Pour batter into greased large muffin tins. Bake at 350\u00b0 for 25 to 30 minutes, until toothpick inserted in center of muffin comes out clean.
