Thai This Salad - cooking recipe
Ingredients

1/2 c. red-skinned peanuts
2 c. shredded cabbage
1 c. shredded carrots
1 cucumber, thinly sliced
1 scallion, chopped fine, including greens
2 tsp. oyster sauce
2 tsp. sugar
1 clove garlic, minced
2 Tbsp. lime juice
2 Tbsp. rice vinegar
1/4 c. peanut oil
freshly ground pepper
Preparation

Heat a small skillet until very hot.
Add peanuts.
Cook over dry heat until skin turns black, stirring constantly.
Remove peanuts to colander.
Let cool for several minutes.
Rub peanuts between hands to remove skins.
Chop peanuts and set aside.
