Scallop Seviche - cooking recipe

Ingredients
    1 1/2 lb. bay scallops
    about 2/3 c. fresh lime juice
    1/2 c. chopped onion
    1/4 c. tomato juice
    1 tomato, skinned and chopped
    1/4 c. olive oil
    salt and pepper
    1/3 c. chopped green pepper
    1/8 tsp. Tabasco sauce
    1 clove garlic, finely chopped
    1 Tbsp. finely chopped parsley
    1/2 tsp. thyme
Preparation
    Toss the bay scallops with the lime juice.
    Place in a bowl with the remaining ingredients.
    Cover; refrigerate overnight. The lime juice does all the cooking.
    Serves 6.
