Broccoli Soup - cooking recipe
Ingredients

1 c. celery with leaves
1/2 c. chopped onion
2 Tbsp. olive oil
1 bunch broccoli, chopped
2 c. fat-free beef broth or 2 c. water with bouillon cubes
1/2 tsp. celery salt (optional)
1/4 tsp. pepper
1 c. milk (if desired)
3 Tbsp. Parmesan cheese, grated
Preparation

In medium saucepan, cook celery and onion in oil until wilted. Add all ingredients except milk and Parmesan cheese.
Bring to a boil; cover and simmer until broccoli is tender.
Puree before adding milk and cheese.
Reheat.
Serves 4.
