Zucchini And Squash Casserole - cooking recipe

Ingredients
    2 c. zucchini sliced
    1 medium onion, sliced
    3 Tbsp. margarine
    1/2 c. Minute rice
    2 c. yellow squash, sliced
    2 (16 oz.) cans stewed tomatoes, drained slightly, save juice
    3/4 tsp. garlic salt
    1/2 tsp. pepper
    1/4 c. saved tomato juice
    8 oz. shredded Mozzarella
    2 tsp. Parmesan cheese
Preparation
    Preheat oven to 350\u00b0.
    Place zucchini in a 9 x 13-inch dish, top with onion.
    Sprinkle uncooked rice over the onion.
    Cut 1 tablespoon margarine into pieces and dot over casserole; top with yellow squash.
    Add tomatoes, spices and juice.
    Dot with 2 tablespoons margarine.
    Cover tightly with foil and bake 50 minutes.
    Remove from oven, remove foil, top with cheeses and bake an additional 5 to 10 minutes, until cheese is melted.
