Pot O' Gold Pork Roast - cooking recipe

Ingredients
    3 to 4 lb. loin roast
    1 can golden mushroom soup
    1/2 c. chopped onion
    1/2 tsp. salt
    6 medium carrots, cut in strips
    2 Tbsp. shortening
    1/2 c. water
    1 Tbsp. paprika
    1 medium bay leaf
    dash of pepper
    4 medium potatoes, halved
Preparation
    In large heavy pan, brown roast in shortening; pour off fat. Add soup, water, onion and seasonings.
    Cover and cook over low heat for 1 hour and 15 minutes.
    Stir occasionally.
    Add carrots and potatoes.
    Cook 1 hour more or until meat and vegetables are done.
    Remove bay leaf.
    Thicken juice for gravy, if desired.
