Fresh Salsa - cooking recipe
Ingredients

6 Anaheim chilies, roasted, peeled and diced or 2 cans (4 oz. each) chopped green chilies
4 large tomatoes, chopped
3 green onions, sliced
2 Tbsp. minced fresh cilantro or parsley
1/2 to 1 jalapeno pepper, seeded and minced
1 garlic clove, minced
1/3 c. cider or red wine vinegar
1/3 c. olive or vegetable oil
1/2 tsp. pepper
1 tsp. salt, optional
Preparation

In a bowl, combine chilies, tomatoes, onions, cilantro, jalapeno and garlic. In another bowl, combine vinegar, oil, pepper and salt if desired; stir into vegetable mixture. Cover and chill for at least 2 hours. This has 2 grams carbohydrate.
